Everybody loves a good cupcake so why not turn your favourite chocolate cupcake (or in my case i made white chocolate) into something a bit more festive. Let the baking begin.
CANDY CANE CUPCAKES
you will need
- your favourite chocolate (or white chocolate) cupcakes ready for icing.
- 3 sticks unsalted butter, softened
- 3 tablespoons heavy cream
- 2 1/2 teaspoons vanilla
- 1 teaspoon peppermint extract
- Pink food coloring
- 3 cups icing sugar
- 5 candy canes, crushed
1/ Placing your candy canes in a bag or between baking paper, using a rolling pin crush them into smaller pieces.
2/ In a electric mixer beat the butter, cream, vanilla and food colouring on a medium speed until mixed together well. Roughly 1-2 mins.
3/ Add the icing sugar and continue beat on a low speed until all is combined. Then on a high speed for 5 mins until the mixture is nice and fluffy
4/ Using a piping bag, (or a spatula if you don’t have the piping bags) pipe the icing onto your cupcakes. Sprinkle a bit of crushed candy cane on top.
and TA-DA you have christmas cupcakes 🙂
